We’re often asked what a chop house is.
And what makes us a bit different?
Our wine list provides a partial answer to both these questions.
To us a chop house isn’t a restaurant or a pub. It’s a meeting place with much more than just beers to drink. Like the coffee house, the alehouse, the boarding house and others, the chophouse is a British institution dating back to the origins of modern commercial trading in the sixteenth and seventeenth centuries. Chop house were originally places where businessmen dined and conducted their affairs over hearty plates of traditionally cooked meats, frequently grilled and washed down with well-kept local beers or fine wines.

Fine wines are one of the things which sets Mr Thomas’s and its brother chophouse, Sam’s apart. The wine list has been judged Manchester’s best in many of the city’s Food & Drink festivals of the last decade.

Steve Pilling
|
Why?
Because wine is patron Steve Pilling’s personal passion.
It’s Steve’s hobby rather than a job. His partner in crime is George Bergier, Chairman of The Guild of Sommeliers, and our wine buyer. Guess what? Wine is George’s hobby too. And that’s why there’s always something going on within these pages. This list is a living thing. Which is bad news for the Bar Manager and, hopefully, good news for you
